A butcher by trade, Mr Dawes says he has so far enjoyed diversifying his core business but concedes he is still on a learning curve when it comes to the deli stuff.
``I'm learning about cheese and I now know a lot about coffee,'' he said. ``I only use freshly roasted beans and I even bought an Italian Dalla Corte espresso machine so we can grind directly into the group head.
``It doesn't get fresher than that.''
