elusive espresso... theorize, philosophize!

a couple months with the VST baskets

Postby Jim Saborio on Wed Aug 03, 2011 8:06 pm

Over the last 2+ years, our baristas have been gradually lightening doses and pulling longer shots. The adaptation of the VST baskets have made a lot of sense to us. It's as if we're finally achieving the flavor clarity we've been working towards.

The stars have aligned. Espresso is fun again. We've crept out of the swamp and are running in a field of flowers.

Progress is being made again.

Totally agree Jim. It took about 5 mins of using the VST baskets to be sold on them. I don't know if you've gone back to your 'old' baskets, but if you do, get ready to start swinging. The frustration levels go through the roof.

Needless to say I'm never going back to our old baskets.
