Pointers on fermentation technology

Hi Folks,
Hoping to try to improve the coffee fermentation process with the 2 farmer groups we work with in Bali. Its pretty rudimentary at the moment. I'm thinking i would start to establish some benchmarks in terms of water temp, ph and volume of water to coffee ratios. Can anybody offer any more advice on what we should be doing or point me too any relevant websites?
