growing, harvesting, processing, cupping, purchasing

Many of us have had experience with storing coffee in Grainpro/vac pacs for a number of years now. A few of our washed coffees, Grainpro'd at origin, have taken on more natural processed-like flavors over time. Anyone else experiencing changes like this?

We have not experienced this problem- although if we do not roast all 30k of a vacuum sealed brick the day it was opened, we've found that once it is roasted the coffee is remarkably faded and at times nearly unidentifiable on the cupping table.
