I was just in Mococa Brazil and saw a very interesting piece of prototype equipment. It is an optical cherry separator that can very accurately sort freshly picked cherry. The benefits are obvious-With some tweaking, the machine should be able to sort basically by brix.
I was introduced to this prototype machine by Marcos and Felipe Croce of FAF (fafbrazil.com). They are considering funding the development of the machine.
Felipe is running some of the most interesting experiments in naturals and varietals that i've seen, by the way.
